A light roast washed microlot with brown sugar, fresh cream and orange blossom — delicate acidity, a smooth body, and a floral bouquet that keeps opening up as the cup cools.

Finca San Jerónimo Miramar

This coffee comes from Finca San Jerónimo Miramar in Guatemala, a farm at over 1,100 meters that we have bought from for years and visit on our origin trips. Much of the farm is a nature reserve. The owner-operators run an on-site lab researching natural methods to reduce fungi and pests rather than reaching for chemicals, and they run a dairy alongside the coffee — the cows, and the rich compost they produce, are a working part of a regenerative farm system. They treat the environment, their employees and the surrounding community with genuine care, which is a large part of why this relationship has lasted.

How to Brew It

For the cleanest expression of the florals, we suggest a pour-over. The Kalita Wave 185 pour-over set is our go-to for this coffee — the flat-bottom bed gives an even extraction that lets the orange blossom and brown sugar come through distinctly.
