The coffee cherry fruit skin is left intact after picking, and goes through the drying process with all of the fruit layers attached. This dried fruit casing is removed at the end of the drying process.

Bayardo’s top priority with his coffee farm has always been to help his fellow countrymen and improve the lives of the workers on his farm. When he first bought the land, it did not have any buildings. Over time, he has put up housing for the workers, imported solar panels and a wind turbine to provide some electricity, improved the toilets and sanitation, and provided funding for a teacher for farmworkers and their children.
