Slow Jam is the result of years of innovation by the team at Finca San Jerónimo Miramar (FSJM), one of our long-time origin partners in Guatemala. Over the course of three harvest seasons, they developed a proprietary process that blends elements of washed and natural coffee processing methods into something entirely new.
Unlike traditional processing — where coffee cherries are depulped before fermentation — Slow Jam coffee cherries are placed directly into fermentation tanks. This allows the fruit to develop a rich, jammy character as the mucilage transforms during fermentation.
To preserve these delicate flavors, FSJM created a custom depulping method that removes the outer layer without water, maintaining the integrity of the fruit-forward profile. The result is a coffee that combines the clarity of washed coffee with the sweetness and complexity of natural processing.
