Our latest release, Nicaragua Salvaje, comes from a careful selection of cherries from the Catuai Yellow and Red varieties grown at the farm Finca San José de las Nubes in Nicaragua, led by our long-time partner and friend, Bayardo.

This coffee delights the senses with notes of tropical fruit, like mango, and warm spices, like cinnamon — all while supporting meaningful initiatives in the communities where it’s grown.

A Unique Coffee Process

What makes Salvaje so special isn’t just its bold flavor, but the meticulous process behind it. This coffee is produced at Finca San José de las Nubes, our long-time partner farm in Nicaragua, led by Bayardo. Here, cherries from the Catuai Yellow and Red varieties are hand-selected by experienced workers to ensure only the ripest fruit moves forward. Each batch is pre-sorted to remove underripe, overripe, and “floaters” (cherries that don’t sink in water), guaranteeing the highest quality from the start.

Once sorted, the cherries are placed in sealed, oxygen-free barrels for 82 hours of anaerobic fermentation. After this stage, the cherries are depulped and undergo a second fermentation until the mucilage naturally loosens. The result is a washed coffee that blends the vibrancy of natural anaerobic methods with the clarity of a washed process.

Coffee evaluator William Schaefer also noted:

“Another new offering is the Salvaje, the standard blend of Caturra and Catuai that is depulped, then anaerobically fermented before being dried. Arrival notes for this coffee: tropical fruit (mango) and brown spices (cinnamon).”

This hybrid approach gives Salvaje its remarkable cup profile — tropical fruit notes like mango layered with warm spices like cinnamon — creating a balance of brightness, sweetness, and structure that truly sets it apart.

Brewing Impact: Supporting the Farm and Local Community

Every cup of Nicaragua Salvaje carries more than flavor — it carries a commitment to people and community. Since 2013, we have worked closely with Finca San José de las Nubes to not only cultivate exceptional coffee, but also to support local initiatives that improve the lives of those who make it possible.

Our team has contributed to projects such as renovating the farm’s kitchen, repainting the farm schoolhouse, and providing other resources that directly benefit the farm’s community. These efforts ensure that the people behind the coffee thrive alongside the beans they cultivate, creating a cycle of sustainable growth and opportunity.

A Label Inspired by Nicaraguan Art

The packaging draws inspiration from the vibrant art of Nicaragua, celebrating local culture and craftsmanship at every step. This movement, founded in the 1970s and influenced by the Haitian painting renaissance of the late 1940s and 1950s, is known for its idealized depictions of community life, lush natural landscapes, and pastoral utopias.
